Sontheimer is the man behind Cuisinarts; Brownstone was consultant editor for his magazine The Pleasures of Cooking. Now they have collected 80-some of the best desserts published in the magazine, from cakes to cookies to frozen souffles. (For the food police, they have included lower-cholesterol, lower-fat modifications of some recipes along with the originals.) Some of these recipes were developed by the magazine staff; others came from contributors such as Jacques Pepin and James Beard. Although smaller in scope than Linda West Eckhardt and Diana Collingwood Butts's Dessert in Half the Time ( LJ 8/93), this includes an appealing variety of quickly made desserts and other baked goods. Informational sidebars--on caramelizing sugar, selecting and storing fresh ginger, and the like--help novice bakers; too bad a timetable is not included in each recipe.
